If you want to achieve a gooey, cheesy, recipe, you need to pick the best type of cheese. This is more like a science, the physics behind the best cheese pull depend on the type of cheese you choose and what are you preparing. Knowing more about cheeses can elevate every dish, or at least, every cheese plate you serve at some fancy diner you make.

Talking about every single cheese is hard, there are too many types and all of them are delicious. That is why we will talk about the main families and a recipe for one of the cheese of each branch. If you want to experiment a little more, don’t be afraid and pair some of these cheeses with some of the recipes we share with you here.

Types of cheeses you need to know

More than experts in this matter, we are foodies; but we separated this list into some of the main categories of cheeses so you can get a little bit of knowledge. Although we will explain down below why any type of cheese is in its category, we recommend you to dig a little deeper if you want to learn everything you can about every type of cheese. If you watch the whole video we share here, or you read this, you will learn more, but you will miss the recipes.

Soft cheese

This category is the one that had the freshest and the moistest cheese, which means these cheeses have lots of water content and not much fat. Thanks to that, they are creamy, soft and the best pick for making pizza.

Pizza Margherita

Mozzarella is a soft cheese and the main ingredient for pizza, so that’s the recipe we recommend for this particular cheese. You will need:

  • Pizza dough – you can buy pre-made dough or make it from scratch, is up to you.
  • Tomato sauce
  • Fresh Mozzarella cheese
  • Some basil leaves

If you have the dough ready – and we hope so – preheat your oven to 230°C. In case you have a pizza stone, place it in your oven, if not, don’t worry. Stretch and press the dough in your prepared sheet or into a round, add the sauce and the cheese – in this order – and bake it for 15 minutes. Finish it with basil leaves.

Bloomy rind

The bloomy rind type of cheese has a culture added; in consequence a rind spout on the outside and, after a time, the same rind breaks down the fat and proteins of the cheese. A good rind cheese is creamy, fatty, and very soft, spreadable soft. Also, the flavours of these cheeses are mushroomy, fruity, and a little bit sweet.

Baked Brie

This cheese is so fancy, you can serve it on its own and get away with it, so, this is a very simple, yet decadent recipe. You will need:

  • One whole Brie wheel
  • Finely chopped parsley and garlic
  • Toasted bread

This is as straightforward as it can be, place the Brie wheel on a sheet with the aromatics on top. Then preheat your oven to 180°C. When the oven is ready, bake the cheese for 15 minutes, transfer it to a cheese board and enjoy with some bread, pears, and honey.

Semi-soft cheese

Is hard to talk about this category because these cheeses are in a middle ground. When you break this cheese it will be soft, but not so soft you can spread it, but not too hard so it crumbles. This category is famous because it includes the Cheddar and the Gouda cheeses and we use those in a lot of recipes.

Hard Cheeses

Hard cheese has very little moisture, but they are strong in the flavour department. They go through an ageing process, which means the water evaporated and the flavour concentrated. Most of these cheeses have a really strong flavour and smell, and the Parmigiano-Reggiano is the most popular type of cheese in this category. We know you love cheese. Mac and Cheese

This is an American classic because is easy to make, is tasty, is cheesy, is gooey and you probably have everything to do with this recipe in your kitchen all the time. So, you will need:

  • Cheddar cheese
  • Elbow macaroni
  • Butter
  • Milk
  • All-purpose flour

First, cook your macaroni and drain them, then, in a saucepan, melt the butter, add the flour and stir until you make a roux. Now add the milk and the cheese, stir constantly and cook it over low heat. When the sauce is thick and cheese, pour your macaroni and mix everything until combined.

Spaghetti Aglio e Olio

With a good plate of spaghetti, you won’t get any regretti, and this recipe is simple, delicious, and sounds fancy. The ingredients are:

  • Spaghetti
  • Lots of thinly sliced garlic
  • Olive oil
  • Lemon juice
  • Finely grated Parmigiano-Reggiano

This recipe requires you to cook the pasta and the garlic at the same time, first, cook the spaghetti in boiling water until they are almost ready, at the same time in a skillet cook the garlic in the olive oil until is golden brown.

Just before your pasta gets al dente, transfer it to the skillet with the garlic, add a little bit of pasta water and oil to your taste, so the pasta can finish its cooking in the skillet. Serve with a dash of lemon juice on top and all the Parmigiano-Reggiano you want.

Extra cheese

This is an extra because we wanted to share a TikTok recipe that went viral. Feta is a soft, cured cheese made with sheep’s milk and that is the main difference. This cheese is part of the category of cheeses that aren’t made with cow milk and is very popular in Mediterranean recipes.

The recipe of the video is very simple, you will need:

  • Cherry Tomatoes
  • Garlic
  • Olive oil
  • One block of Feta cheese
  • Any type of pasta

Again, this is a very straightforward recipe; you need to fill an oven pan with cherry tomatoes, some chopped garlic, and precooked pasta of your choice, now toss a block of Feta in the middle and sprinkle olive oil. Throw that in the oven and bake it at 200°C for four minutes, and then at 215°C for ten more minutes.
